Beef Skirt Steak
This hard to find steak isn't available at most meat counters. One of our favorites, the Skirt Steak is cut from the inside of the rib cage and recognized for its rich, beefy taste. It has a loose-grained texture which helps it absorb flavors, making it a good candidate for marinades. This is the cut classically used for Mexican fajitas—cook quickly, then slice into strips and serve with tortillas.
